In the first stage, the grapes are fermented and distilled to produce a holanda, which is a low-alcohol spirit. In the second stage, the holanda is distilled again in a copper pot still to produce a brandy with an alcohol content of around 65%.

Produced by distilling local wine, and ageing the spirit in ex oloroso and amontillado sherry casks.Add a few drops of Angostura bitters on top of the ice and use a bar spoon to muddle with a strip of orange peel. Aged in a Solera system utilising casks that previously held Oloroso and Amontillado Sherries, this brandy boasts a rich, earthy flavour profile with hints of tobacco and old oak upfront.
The result is a wonderfully complex, and somewhat savoury brandy, with notes of dried, toasted almonds and hazelnuts, salted caramel, greengages, rich dark oak, cedarwood, chopped herbs, slight woodsmoke, sherry, tobacco and dry white wine. O. Solera Gran Reserva Brandy can be used to add a touch of luxury to a variety of dishes, such as stews, soups, and sauces.
